The Best Tzatziki
I don't know when we started eating Tzatziki but it's been a staple in our house for years. We've all stopped eating red meat but I have fond memories of cooking slow roasted lamb for my kids when they were growing up and having lamb wraps with tzatziki and hummus. It was their favourite!
This is such a versatile dip. It's great with lamb as mentioned, great healthy alternative on a cheese platter, delicious as a snack with carrot & cucumber, works on wraps, it's even a delicious dip to have with Greek roast potatoes.
The Best Tzatziki
INGREDIENTS:
1 cup of natural Greek Yogurt
1/2 a cucumber
1/4 cup of Dill
Small garlic clove
1/2 a Lemon
Salt & Pepper
Olea of Monemvasia Extra Virgin Olive Oil
I like to grate the cucumber with a fine grater before squeezing out all it's juice with my hands, into the sink then I add the dry flesh to a small dip bowl. Grate in the garlic and throw in the roughly diced dill, then add salt & pepper and the juice of half a lemon. Lastly spoon out about 1 cup of yogurt into the bowl and mix it all together. Top with olive oil for extra flavour.
