Warm Marinated Olives
I first had these olives on my most recent trip to Greece in July. They were offered to us at one of the beautiful local restaurants behind the beach on Kea (a beautiful island just off the coast of Athens). It's a bit of a strange concept to warm olives but they are delicious and a health snack or perfect on a cheese platter.
WARM MARINATED OLIVES
- Olives (I use 3 different kinds - kalamata, green and sicilian)
- 1/4 cup Olea of Monemvasia Extra Virgin Olive Oil
- 2 small sticks of Rosemary
- 2 small red Chillies
- 2 Garlic cloves
- 1/2 a Lemon's Rind
- Salt
- 1 tsp Peppercorns
Firstly pour about a quarter of a cup of olive oil into a pan on medium - high heat and add the garlic (cut into slithers), rosemary, chilli, peppercorns and lemon rind. Once the garlic has started to cook but before it goes brown (about 5 mins) add the olives to the pan. Swish the olives around in the warm oil and make sure the everything is mixed together well. After about 5 more mins, the olives should be heated and you can serve directly onto your cheese platter. Simple but something nice and different.
