Asparagus & Poached Eggs

A healthy breakfast that's quick and yummy. 

This is honestly a 10 min meal and is such a good alternative to eating carbs in the morning. Keeps you light and fresh, ready for a big day of adventures. 

ASPARAGUS & POACHED EGGS

Serves 2

  • 8 Asparagus
  • 4 Eggs
  • Apple Cider Vinegar
  • Olea of Monemvasia Extra Virgin Olive Oil
  • Parmesan (optional)
  • Salt & Pepper

Start by boiling a pot full of water and add about a cap full of vinegar to the boiling water before mixing around and dropping the eggs in the centre, one at a time. While the water was boiling, turn on your BBQ or grill and oil the asparagus. Place them on the grill and let them char for about 10 mins. By this time, the eggs would be ready to go. 

Place asparagus down on the plate with the eggs on top and shave some parmesan over the eggs and a drip of olive oil. Add salt and pepper to taste. Another little secret is to add a tiny little drop of ACV to your running egg yolk which makes the eggs taste like hollandaise sauce. Enjoy!
